I see nothing wrong with all girl or all boy organizations, especially if the children are socializing with other genders at other times.
Giggling girls need to just be girls sometimes. Talking about boys, hair, clothes and such. "Gross" boys need to just be boys sometimes. Catching frogs and lizards, having burping contests and the like. Then there is the camping. Mixing genders would create all sorts of logistic problems, require more chaperones (which are always hard to come by) and be a general headache. Believe me, it's hard enough with one gender.
As for the cookies/cooking/baking.......yes the Boy Scouts learn camp cooking skills. Girl Scouts earn all sorts of badges for things like woodworking. The cookies sale is also used as a tool to teach business practices. Marketing, selling, delivering and collecting money. Most cookies are pre-sold, so good record keeping is essential.

The Girl Scouts of today are very different than when I was one. More progressive. I'm not sure about the Boy Scouts.
