Okay, I'm open to suggestions on how to make a bottom round roast tender. Can't just roast 'em like an eye round because they turn to shoe leather. Tried marinating-the edges were sort of tender, but the middle was shoe leather. The last one I got I put in the slow cooker for hours and hours and hours....it was still tough.

My grocer often has 'em on sale...but if it's not fun to eat, what's the point?

Anything that proves that tough, try it in the crockpot. If you do not want it sitting in the drippings, ball up aluminum foil and place on the bottom of the crock and place the roast on top

Great tip about the aluminum foil, Beth ~ I've never heard of that ~ and obviously never thought of it either ~ Image

I usually toss some thick carrots and whole celery stalks on the bottom for exactly that reason. lol But they do get smushy towards the end. I had that last roast in the crock for 4 1/2 hours, maybe it needs to go all day.

Another good base for proteins is thick cut onion placed on the bottom of the crock. Works great, and tasty too ~
