Lately, I've been missing my granny. I made her stew last night, and today I'm trying to improvise the birthday cake she'd make for me every summer (even though my b-day is in Dec.)It was a rum cake with mocha icing. I have no cake pans, so it's cupcakes I can share with the neighbors since we can't possibly eat a whole batch.
She always did a rum sponge cake from scratch, and I'm not that clever. I remember her actually brushing rum on the thing. So I'm using a boxed butter cake (the kind you have to add a stick of butter to) and rum extract. Butter, rum, what could go wrong?
She always made the icing from scratch too, of course, and I got the actual recipe from my mom. But today, thanks to a coupon, I'm trying the "blank" icing that you mix flavor packets into. Got the mocha packet, but I added some instant espresso, too. Quite yummy so far, but not hers. Next time:
1/3 C butter
1/8 tsp salt
1 lb powdered sugar, sifted with
1/2 C unsweetened cocoa
1/3 C very strong hot coffee
1/2 tsp. vanilla
With mixer, cream butter, salt, 1 C of the sugar mixture until light and fluffy
Alternate adding the rest of the sugar mixture and the coffee, beating well in between
Add vanilla at the last minute
