Quick, easy, and REALLY delicious ~ Sooz

Parmesan Crusted Chicken

• 1/2 cup Hellmann's Real Mayonnaise
• 1/4 cup grated Parmesan cheese
• 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
• 4 tsp. Italian seasoned dry bread crumbs

1. Preheat oven to 425°.
2. Combine Hellmann's with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
3. Bake 20 minutes or until chicken is thoroughly cooked.

Notes:

• I'm sure any brand of mayo would work ~ I use Hellman's Lite ~
• I used a bit more cheese ~ a rounded [vs a leveled-off] 1/4 cup ~
• If you're using very thin-cut chicken breast halves, adjust the baking time ~
• I also roasted some asparagus at the same time ~ instead of using olive oil, I used a splash of Italian salad dressing vinagrette ~

Tried this with regular chicken legs but used homemade bread crumbs and seasonings.
Tastes great!

FTR, I did try this with pork chops and it is equally delicious ~ and easy ~ I used boneless loin chops that were about 1/2" thick ~ I did adjust the cooking time to a bit longer ~

Aight.
Did this one again.
So there I am doing what has to be done and stick the chocken in the oven.
Then I have an Eureka (aka senior) moment. I forgot the bread crumbs.
So, wtf, it's half baked, like most of my ideas, and I toss a handful of bread crumbs on top of the chicken anyway, even though everything is half cooked.
It tastes even better.
