Sautee sliced onions in olive oil.
When transluscent add spinach and sautee til semi-soft.
Add lemon juice and heat.
Remove from pan, drain and let cool a wee bit then toss with parmegian.

Edit: Forgot the minced garlic.

I've been sauteing spinach with minced [or sometimes roasted] garlic in olive oil for ages ~ but I've never added onion or parmesan ~ sounds wonderful ~ I'll have to try it ~
