Here's one of my favourites (for 1):

Take about 1/2 cup of mashed potato mixed with finely chopped onion.
Add one small can of salmon, one teaspoon of curry powder and plenty of salt and pepper and mix thoroughly.

Form into a pattie and fry in an almost dry frying pan until the sides get crisp and brown.

Then (and here's the real trick) remash and reform the pattie and fry again. Do this as many times as you like until the crispy potato is distributed throughout the pattie.
I like it with hot lime pickle, but that's an acquired (and addictive) taste.

I love salmon patties, but I'd never refried them like that. Sounds like something even my hubby would eat. I don't use curry, but would sub with maybe some garlic and a touch of Worcestershire.

I'm kind of a curry addict Rose.

Garlic would be nice, but I'd be inclined to a little bit of lime juice rather than Worcestershire.

That would be good Cattleman, but...........in order to tempt hubby, the Worcestershire would work better. Maybe both?! I'm still trying to convince him since he "doesn't like Salmon".. ha, he'll learn.
