We had this in Alabama with BBQ ribs. Yummm! Probably a better summer recipe.

Corn Slaw

1/2 cup sour cream
1/2 cup mayo
1/4 cup sugar
1/4 cup white vinegar
salt and pepper to taste
mix well
add 1 large can of whole kernel corn, well drained
3-4 cups carrots, scraped and chopped
1 green bell pepper chopped
1 onion chopped
toss gently and chill for a minimum of 2 hours.

As a personal preference, I would use a red bell pepper.
