Pork loin roast with a curry rub, sliced about 3/4" thick (left overs)
An apple, diced
1/2 onion, diced (left overs)
Maple syrup
Calvados (apple brandy)

Sautee onion and apple till tender.
Add pork slices.
When heated through add maple syrup and when hot deglaze pan with Calvados (evaporate alcohol).

Altho I'm not a big fan of curry, I am a very BIG fan of maple ~ and that sounds WONDERFUL, oskar!

I don't see why it wouldn't work without the curry.
We were debating whether to use maple syrup or marmalade.
N made an executive decision.
