We bought some boneless pork chops on sale, so I was trying to figure out something new to do with them. This is what's cooking in the Crock Pot now:

1 large sweet potato, peeled and cubed
3 pork chops browned in butter. (omg, that smells so good lol)
2 Macintosh apples cubed peeled or not, your choice
1/4 cup of brown sugar or so. I just sprinkled some over the apples.
1 tsp cinnamon (or to taste, I added less)

Put sweet potatoes in crock pot, add pork chops then apples. Sprinkle sugar/cinnamon over the top and lightly salt. I also added pepper to the pork chops before browning.

Cook on low for 6 hours. Full meal ready to go. I'm sure it will be delicious! Can't go wrong with apples and pork. :)

It was delicious! Even hubby liked it, lol. Tender pork chops, apples were almost applesauce-like and sweet potatoes were very tender. The apple/brown sugar/cinnamon flavor seeped into the chops. I'll be making that again for sure.

Try maple syrup instead of sugar?

roseanne, that sounds delicious and I'll give it a try soon ~ and since oskar mentions maple syrup, I'll try that too since I've become a maple syrup fanatic ~ my local grocery store is now roasting turkey breasts and hams with a maple glaze in the store and selling both at the deli counter ~ both have become mainstays for me ~

I love apples with pork ~ and since I can no longer get Stouffer's escalloped or harvest apples, I've taken to using a can of apple pie filling, doctoring it with brown sugar and cinnamon, and baking it with the pork chops or tenderloins ~ but now that it's wintery, time to bring out the slow cooker and do it from scratch ~

The extra flavour from the Calvados is worth it.

An ounce or two.
Doesn't have to be Calvados. Any decent apple brandy will do.

Maple syrup sounds good. I'll try that AND I have some apple brandy that we keep moving from one unit to another. Hubby keeps saying "hang on to it, we can use it one day" lol, now I can. I won't tell him when I make that again, but just use it and see....
