The eye of round is generally pretty tough.
I read a weird way of cooking it.

Preheat oven to 500F.
Rub whatever on the roast or leave it as is.
Reduce heat to 475F, put roast in oven and cook 7 minutes/pound.
Turn off the oven.
Come back in 2.5 hours and voila!
Medium rare and tender.

WARNING: DO NOT OPEN THE OVEN THE ENTIRE TIME.

Edit: The above is based on a 3 pound roast. We bought a whole eye and cut it up. The piece I cooked weighed about 1 pound and was a bit "rarer" than anticipated. I'd say increase time to 10-12 minutes/pound for medium rare. I like mine near-raw but my wife...

That's close to how I learned to cook prime rib, oskar ~ the only difference off the top of my head is that I think I reduce the temp to 400-425* and let it sit in the oven for a shorter time period ~ it DOES work!

My Mom used to cook all roasts for hours at a low temp. Similar to the way a crock-pot works. Always tender.

Do you cover the roast oskar? Lid or foil.

Not covered. And I used a rub similar to Montreal Steak Spice.
