That DOES look good! I'd add some garlic, but that's just me. I like garlic on all potatoes. You could add cheese near the end and/or add bacon crumbles. Sour cream on the side. Yumm.

The only reason I would hesitate is the time of year. Don't want to heat up the place any more than I have to. I wonder if you could cook them most of the way in the microwave, then broil them for a few to crisp up the edges?

Wonder what kind of potatoes those are? Idaho or Russet? Do you know?

Bet it would work on the barbie.
