Someone left a little tote full of plums in their unit. I tried one, but wasn't impressed. They are Italian Prune Plums and not very juicy. I prefer black plums. Anyway, because they were free I found a great cobbler recipe that is easy (important to me, lol).

Plum Cobbler

Crust:

2 C Bisquick
1/2 C milk
2 tbs. sugar
1/4 teaspoon cinnamon

Mix together and set aside.

Filling:

12 plums pitted and cut into eighths
1 C sugar (it's very sweet, so if you like tart pies you might want to cut that to 3/4)
3 tbs. cornstarch
1 tsp vanilla
pinch of cinnamon

Mix together and spread into 8x8 pan. Spoon crust over top.
Bake at 400 for 20-25 min. (I used toaster oven and it took about 17 min.
It's done when the crust sounds hollow when you tap it.

I don't know why, but my filling mixture didn't thicken enough so it's a little soupy. Next time I may use flour instead of cornstarch. Still good and would be great warm with some vanilla ice cream.

So...I put a pat of butter on my serving and it mellowed the sweetness. Definitely only use 3/4 cup, or even 1/2 cup of sugar.
