Collard greens practically grow wild in Alabama and are cooked to death with some pork fat/bacon to eat as a side vegetable. They are a good source of Vit. A and C , but I never liked them.

I had a guy come thru my register the other day who was buying some. We had a short chat about my dislike. He said the leaves make GREAT wraps, either meat-filled or vegetarian. I did some research and it's more popular than I thought. Imagine that! :lol
