I don't know the exact name of this because I cut that off when I cut out the recipe, lol. Hubby found this on a calendar we had and decided to try it while he was between jobs. VERY good!
1lb fusilli 1 Tbsp olive oil 4 Italian sausages, casings removed (or equivalent ground sausage) We use mild, but whatever floats your boat. 2 Tbsp fresh rosemary (one Tbsp of dried) 4 cups of butternut squash seeded and cubed.
Salt and pepper to taste.
Heat oil in large pan, add sausage and rosemary. Brown sausage, stirring occasionally. While that is cooking, boil squash until fork tender. Also boil water for fusilli and cook to desired consistency.
Add everything to frying pan and heat until desired temp.
As an added note, I read online an easy(ier?) way to handle the squash since it's pretty tough to peel and cube. Prick squash with for several times. Microwave for 3 minutes. Supposed to make it easier to peel and cut. Haven't tried that yet.
