I eat a lot of chicken and this "Kraft Food & Family" recipe is maybe the easiest and fastest-prep recipe I know ~ and it's sooooo good ~ ENJOY! ~ Sooz


One-Pan Chicken and Potato Bake

4 bone-in chicken pieces [1-1/2 lbs]
4 large potatoes, cut into wedges
1/4 cup Kraft Zesty Italian Dressing
1/4 cup grated Parmesan cheese
chopped fresh parsley - optional

Preheat oven to 400*. Place chicken and potatoes in 13x9" baking dish. Pour dressing over chicken and potatoes, and sprinkle with cheese. Bake 1 hour or until chicken is cooked thru [180*F]. Sprinkle with chopped fresh parsley, if desired.

Notes:
~ You can substitute sweet potatoes or acorn squash for the potato wedges for a different flavor.
~ I generally use a bit more of both the dressing and the grated cheese.
~ I generally use the Parmesan/Romano cheese combination.

I love chicken so this is one recipe I am going to try this weekend. Sounds yummy.

It was yummy!!!!

Hubby made this tonight for us and his friend, Mike. Mike helped put the lights on the Christmas trees so a little food, a little wine was a good deal.

Delicious!!!!!

I'm SO happy you liked it, Kath ~ I make it often, mostly because those are ingredients I always have on hand and it's so fast and easy ~ if it's just me, I'll often make the 4 pieces of chicken [but less potatoes] because the chicken is equally good as left-overs ~

UPDATE ~ I used this recipe last night, substituting pork chops for the chicken ~ it was terrific ~ I used fairly thick [3/4" - 1"] boneless loin chops ~ 3 chops were just under 1-1/2 pounds ~ only adjustment I made was to lower the temp to 375* because I was using a pyrex glass baking dish ~ next time, I'm going to try tossing some veggies [asparagus or brussel sprouts] into the dish as well ~
