Start with the basic recipe and customize it any way you like:
Basic Quick Bread
- 2 cups all purpose flour
- 2 cups whole wheat flour
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 2 tablespoons canola oil
- 2 cups water
Preheat oven to 350 degrees. Spray a 9x5" loaf pan with cooking spray and give it a good coating cause this concoction tends to stick to the pan. In a large bowl, whisk together all the dry ingredients. Add the oil and water and mix well. If batter is too dry, you may need to add additional water. Pour the batter into the prepared pan and bake for about an hour or until a knife inserted in the center comes out mostly clean. Remove from oven and turn out on a rack to cool.
Some variations:
1. Substitute 2 cups rolled oats for 2 cups of the flour(s) for an oatmeal bread.
2. Use all whole wheat flour for a heartier loaf.
3. Increase the sugar and add dried fruits and spices for a different flavor: ex. 1/2 cup sugar, 1 teaspoon ground cinnamon and 1 cup raisins.
4. To reduce the fat, replace the oil with unsweetened applesauce or prune puree.
I don't think I've ever made this bread the same way twice.
