I am a Paula Deen fan (she's got some shows on the Food Network) and this chicken salad recipe is from one of her cookbooks. Makes a great spring or summer meal.
Hawaiian Chicken Salad
4 cups cooked, cubed chicken (about four boneless, skinless chicken breasts) 2 cups diced celery 1 cup sliced almonds 1 cup reduced fat mayo 1 (20oz) can crushed pineapple in juice, drained 2 (11 oz) cans mandarin oranges, drained 1lb grapes (red or green or combination), halved
[*]In a large bowl, mix together the chicken, celery, almonds and mayo.[*]Gently fold in the pineapple, orange segments and grape halves.[/list]Can be served immediately or chill and serve later. I made this today and used it as the filling for wraps but you could also serve it on croissants or on a bed of greens, such as baby spinach leaves. It makes a lot so it would be good for a crowd.
