When you are hurried, tired or just can't think of anything to eat, this is a great dish.

This recipe can be adjusted to individual tastes and/or for variety.


Prepare rice. Any kind you like.

While it is cooking,

Cube one or two chicken breasts into 1/2" cubes or larger if you desire.

Stir-fry chicken in olive oil, adding black pepper and garlic (or any other spice/herb you might like) .  If 1/2" cubes, it takes about 5-7 minutes to cook.

I heat up some sweet and sour sauce in the microwave to toss my chicken in.
Hubby heats up some Frank's hot sauce for his.
If you are just one person, you can add your favorite sauce directly to stir fry pan/wok

Serve over rice.

I also steam frozen mixed veggies (broccoli, cauliflower, carrots & peppers) as a side dish for me. Hubby is "alergic" to veggies, lol, he only likes carrots, potatoes and corn. Sigh.

I love this dish!
