I've been trying recipes from an e-cookbook I found on line called "Stone Soup Minimalist Home Cooking" (link to free downloadable ninety-seven pg pdf file here) and used this one tonight for dinner.  Very good and easy to throw together in just a few minutes.  Serves two.

Couscous with Tuna/Tomato sauce

1 cup couscous
1/2 bunch scallions, sliced
1 teaspoon minced garlic
1 can (5-6oz) tuna, drained
1 pint cherry or grape tomatoes, halved

   1. Boil 3/4 cup water in a small saucepan and add couscous and scallions.  Cover, remove from heat and let stand for about five minutes.
   2.  In a skillet, heat 2 tablespoons olive oil and add garlic.  Brown lightly.
   3. Add tuna and tomatoes and cook until tomatoes have broken down and look saucy.  Season with salt and pepper.
   4. Fluff couscous and divide between two plates.  Top with the sauce.

Serve with a salad and you have a nice, light dinner or lunch.
