My mom came through for us, Gramps!
Lumpia
4 cups shredded cabbage
1-1/2 cup finely chopped celery (add some leaves)
1/2 cup chopped green onions
1 medium clove garlic, finely crushed
l lb. lean ground beef or chuck
1 tbs butter or margarine
1 can (about 7 oz) small or broken shrimp, undrained[/u]
3 cups fresh or 1 can bean sprouts, drained
1/4 cup soy sauce
1 tbs sugar
1/2 tsp MSG
In large skillet, saute on medium flame: ground beef and garlic in butter, breaking up the meat until it has just lost color but not dry. Add vegetables & seasonings, (except if using canned[/u] bean sprouts, this goes in at the last minute).
Put lid on skillet & cook about 5-7 mins, stirring occasionally and mix well.[/u] Drain well in colander, cool & refrigerate.
Skins are available in the produce department. Put skin in front of you on the diagonal. Put mixture in. Lift left corner, then right corner, then bottom corner, and turn over to completely cover. Put a little bit of water on the edges to seal thoroughly. Put on wax paper or foil & chill several hours. Fry in hot oil and drain upright.
Makes 16-18 pcs.
P.S. You can fry these half-way, and then wrap tightly in foil & freeze for about 3 weeks. Let them thaw completely before you finish frying them.
